Nelson Hurtado Anaerobic Natural
Having travelled around many of municipalities of Antioquia in search of coffee farms with the highest production, Farmer Nelson Hurtado can't remember a time in his life that he was not picking coffee. Along the way he fell in love with the town and people of Gaitania and so left Antioquia behind in 2005. In 2014, using his life savings, Nelson Hurtado bought his own farm, El Eden. Since then he has been producing beautiful coffee by maintaining a farm full of trees and birds which create fertile soil and pay tribute to more traditional farming practices in Colombia.
The cherries of this natural yellow caturra are hand picked on the farm and then fermented for 40 hours inside grain pro bags. Cherries are then hand sorted and placed on raised beds with the coffee cherry intact to dry. This processing method brings out lots of tropical fruit and strawberry flavours.
We think it tastes like Strawberry, White Peach, Pineapple and Dark Chocolate.

We have roasted this coffee for both espresso and filter brewing, including V60, plunger and Aeropress.
19g in 40g out, 28 - 30 seconds
20g medium - coarsely ground coffee
300mls 93degree water
Tare scales and start timer
Pour 50g coffee
At 45seconds, pour to 120g
At 1.30min pour to 180g
At 2.15mins pour to 240g
At 3mins pour to 300g
At 3.45mins remove brewer, give the coffee a stir and enjoy!
23g coarsely ground coffee
300g 96degree water
Add 60g hot water onto coffee in plunger
Allow to bloom for 30seconds
Add 240g hot water
Stir 5 times
Brew for 4 mins
Remove scum and foam from top
Place plunger lid on top, but do not plunge
Brew for another 4 minutes
Carefully plunge half way, then pour your coffee into your favourite coffee cup and enjoy!
